Recently I’ve discovered my love for pesto. I know, I’m late.
This Infused Caprese Pesto Pasta Salad is a bit of a mouthful to say, but really easy to make. The first time I made this was for a sesh with some of my girlfriends and it was a hit.
Of course you can also make this recipe and not infuse it, it’ll taste just as good. But I like to add some OM Edibles Olive Oil to mine when the occasion is right.
Total Time 20 mins
16 oz. Cooked Rotini Pasta ( I use Barilla Ready Pasta)
8 oz. Container Cherry Tomatoes, halved
8. oz. Mozzarella Pearls, halved
1/4 cup Basil Pesto
3 tablespoons Infused Olive Oil (I use OM Edibles)
2 tablespoons Balsamic Vinegar
Salt & Pepper to Taste
In a large bowl combine all ingredients and mix well. Cover and chill until ready to serve, usually about an hour.
